Delicata Squash Is What’s in the Market

What is it?

What is that crazy, striped veggie that has popped up at the markets?  It is Delicata squash!  Delicata squash is a type of winter squash  – a squash that is harvested when the skin is hard in the fall before heavy frosts set in. Delicata squash is native to North and Central America and is available in the fall and winter. It has sweet orange flesh and a tender skin that is pleasant to eat when cooked. No peeling required makes prep easy and fast. For bonus points, you can also toast Delicata seeds for a tasty snack!

Buying and caring for it

How do I pick a Delicata? Choose a squash that is firm and heavy for its size.  Avoid squash with any holes, soft spots, or mold on the rind.  Delicata can be stored in a cool dry place for several weeks before use. When ready to use, wash, cut open length-wise, and scoop out the seeds. Once you cut or cook the squash, store in the refrigerator and use within 4-5 days.

Why eat it?

Delicata squash has fiber and potassium, along with some vitamins A and C, magnesium and manganese.

Now that I have it, how can I eat it?

Slice into half inch chunks, toss with 1 tbsp oil, your favorite spices (see below for great ideas), a dash of salt and pepper, and roast on a greased or foil lined baking sheet at 425F for 30 minutes.

  • For Moroccan flair, use 1 tsp ground cumin and ¼ tsp of ground cinnamon
  • For Latin American taste, use 1 tsp ground cumin, ½ tsp ground chili powder
  • For curry lovers, use 1 tsp curry powder
  • Feeling like Italian? Use 1 tbsp fresh, chopped rosemary

Eat roasted Delicata on its own as a side dish, or incorporate into a salad, like the salad shown here. 

Add raw cubed Delicata to soup or stew as it cooks.  It’s also delicious in curries and tagines.

As a winter squash, Delicata can be substituted for any other winter squash in any of your favorite recipes.
